Anime is japanese animation. (can be english dubbed and a lot are.) It's hard to define it because there is such a wide variety of it which makes it different than regular animated television.

Unfortunately I haven't seen Attack on Titan.

I'd recommend Angel Beats for a first show just because it's amazing and not that long of a series. Gives you a taste of anime without a long commitment.

I would first watch various anime genres, (Romance/slice of life, fighting, school life, ecchi ect..)

I would recommend the following:

Depends on what genre you're into. Read my sticky and look at the suggestions there.

Clannad - Will make you laugh, cry and feel good/bad.
Sword Art Online - Romance, action.
Attack on Titan - Action, tragedy and some romance (Kinda)
Hunter x Hunter - Action, adventure and pretty funny at times.

The best animes i'd recommend are Fate: Zero, Zetsuen no Tempest and if you can handle some gore and/or like literature a definite recommendation is Psycho Pass.
